Ingredients
  

Cookie Dough
  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg room temperature
  • 2 tsp vanilla extract
  • 3 cups all-purpose flour spooned and leveled
  • 1.5 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
Glaze & Topping
  • 3 cups powdered sugar sifted
  • 4-6 tbsp whole milk
  • 1 tsp vanilla extract clear preferred for white glaze
  • 1 pinch salt
  • 1 cup pastel bunny candies and sprinkles assorted

Equipment

  • Baking sheets
  • Wire rack
  • Parchment paper

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream softened butter and granulated sugar until pale and fluffy (3-4 mins). Beat in egg and vanilla.
  3. Whisk flour, baking powder, baking soda, and salt in a separate bowl. Gradually add to wet ingredients on low speed until just combined.
  4. Scoop dough onto prepared sheets, spacing 2 inches apart. Flatten slightly.
  5. Bake for 10-12 minutes until puffed and bottoms are barely golden. Cool on pan for 5 minutes, then transfer to wire rack to cool completely.
  6. Whisk powdered sugar, milk, vanilla, and salt until smooth to create the glaze.
  7. Dip cooled cookies into glaze or spoon over top. Immediately decorate with bunny candies and sprinkles.
  8. Allow glaze to set for at least 1 hour before storing.

Notes

Ensure cookies are completely cool before glazing, or the glaze will melt and run off. Store in an airtight container at room temperature.
