- Preheat oven to 350°F (175°C). Line a 9x13 inch baking pan with parchment paper.
- In a large bowl, whisk together melted butter and brown sugar until smooth. Add eggs, vanilla, and orange zest; whisk until combined.
- In a separate bowl, whisk together flour, baking powder, salt, and ginger.
- Gradually stir the dry ingredients into the wet mixture until just combined (do not overmix). Fold in the 1 cup of dried cranberries and white chocolate chips.
- Spread batter evenly into the prepared pan. Bake for 18-22 minutes, or until edges are golden and a toothpick inserted comes out clean or with moist crumbs.
- Allow bars to cool completely in the pan on a wire rack.
- Make the frosting: Beat softened cream cheese, powdered sugar, and orange juice until smooth and spreadable.
- Spread frosting over cooled bars. Sprinkle with remaining chopped cranberries and orange zest. Cut into squares and serve.
Notes
For cleaner cuts, chill the frosted bars in the fridge for 20 minutes before slicing. Wipe your knife with a damp cloth between cuts.
