- Make the topping: Whisk melted butter, flour, sugars, and cinnamon with a fork until crumbs form. Set aside.
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream softened butter and sugars together until fluffy (2-3 mins). Add egg and vanilla; mix well.
- Whisk flour, baking soda, salt, and spices in a separate bowl. Gradually mix into wet ingredients.
- Gently fold in diced apples by hand.
- Scoop dough onto sheets (2 inches apart). Make a small indentation and pile crumb topping on each.
- Bake 11-13 minutes until edges are golden. Cool on sheet for 10 minutes, then transfer to wire rack.
- Whisk glaze ingredients and drizzle over cooled cookies.
Notes
Store in an airtight container for up to 2 days. Dice apples very small to ensure even baking.
