Ingredients
  

Crumb Topping
  • 0.5 cup unsalted butter melted
  • 0.75 cup all-purpose flour
  • 0.5 cup light brown sugar packed
  • 0.25 cup granulated sugar
  • 1 tsp cinnamon
Cookie Dough
  • 0.5 cup unsalted butter softened
  • 0.5 cup light brown sugar packed
  • 0.25 cup granulated sugar
  • 1 egg large, room temp
  • 1 tsp vanilla extract
  • 1.5 cups all-purpose flour
  • 0.5 tsp baking soda
  • 0.25 tsp salt
  • 1 cup Granny Smith apple peeled and finely diced
Glaze
  • 1 cup powdered sugar
  • 1-2 tbsp milk
  • 0.5 tsp vanilla extract

Equipment

  • Stand Mixer or Hand Mixer
  • Baking sheets
  • Parchment paper
  • Cookie scoop
  • Wire rack

Method
 

  1. Make the topping: Whisk melted butter, flour, sugars, and cinnamon with a fork until crumbs form. Set aside.
  2. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  3. Cream softened butter and sugars together until fluffy (2-3 mins). Add egg and vanilla; mix well.
  4. Whisk flour, baking soda, salt, and spices in a separate bowl. Gradually mix into wet ingredients.
  5. Gently fold in diced apples by hand.
  6. Scoop dough onto sheets (2 inches apart). Make a small indentation and pile crumb topping on each.
  7. Bake 11-13 minutes until edges are golden. Cool on sheet for 10 minutes, then transfer to wire rack.
  8. Whisk glaze ingredients and drizzle over cooled cookies.

Notes

Store in an airtight container for up to 2 days. Dice apples very small to ensure even baking.
