General Tso's Chicken & Lo Mein

Crispy, golden-fried chicken tossed in a sticky, sweet and spicy sauce served over tender lo mein noodles for the ultimate takeout-style dinner.

Ingredients
  

Chicken & Marinade
  • 1 lb chicken thighs cut into 1-inch pieces
  • 1 egg beaten
  • 1 tbsp soy sauce
  • 0.5 cup cornstarch for coating
Sauce
  • 3 tbsp soy sauce low sodium preferred
  • 2 tbsp hoisin sauce
  • 2 tbsp brown sugar
  • 1 tbsp rice vinegar
  • 1 tsp chili paste adjust to taste
Noodles & Garnish
  • 8 oz lo mein noodles
  • 2 cloves garlic minced
  • 1 tbsp ginger freshly grated
  • 2 stalks green onions sliced

Equipment

  • Wok or large skillet
  • Pot for boiling noodles
  • Mixing bowls
  • Whisk
  • Slotted spoon

Method
 

  1. Whisk egg, 1 tbsp soy sauce, and sesame oil. Add chicken and marinate for 10 minutes.
  2. Mix broth, remaining soy sauce, hoisin, vinegar, sugar, and chili paste in a bowl.
  3. Cook noodles according to package, drain, and set aside.
  4. Coat chicken pieces thoroughly in cornstarch.
  5. Fry chicken in hot oil (350°F) until golden and crispy (4-5 mins). Drain.
  6. Sauté garlic and ginger in a little oil until fragrant.
  7. Add sauce mixture and simmer until thickened.
  8. Toss chicken and noodles in the sauce until evenly coated.
  9. Garnish with green onions and sesame seeds and serve immediately.

Notes

For extra spicy chicken, add dried red chilies to the hot oil before adding the aromatics.
