Ingredients
  

Dough
  • 2.5 cups all-purpose flour
  • 1 tsp instant yeast
  • 1 tsp sugar
  • 0.5 cup warm water 110°F
  • 0.5 cup Greek yogurt plain
  • 1 tbsp olive oil
  • 1 tsp salt
Topping
  • 3 tbsp butter melted
  • 2 cloves garlic minced
  • 2 tbsp fresh parsley chopped
  • 0.5 cup feta cheese crumbled

Method
 

  1. Combine warm water, sugar, and yeast in a bowl. Let sit 5 minutes until frothy.
  2. Add yogurt, oil, flour, and salt. Mix and knead for 5-7 minutes until smooth.
  3. Place dough in an oiled bowl, cover, and let rise for 60 minutes until doubled.
  4. Mix melted butter, minced garlic, and parsley in a small bowl.
  5. Divide dough into 6 balls. Roll each out to 1/4 inch thickness.
  6. Heat a dry skillet over medium-high heat. Cook bread 1-2 minutes per side until bubbly and charred.
  7. Immediately brush with garlic butter and top with feta cheese.
  8. Serve warm.

Notes

Do not oil the pan when cooking; a dry hot pan creates the best char. Keep cooked breads wrapped in a towel to stay soft.
