- Combine warm water, sugar, and yeast in a bowl. Let sit 5 minutes until frothy.
- Add yogurt, oil, flour, and salt. Mix and knead for 5-7 minutes until smooth.
- Place dough in an oiled bowl, cover, and let rise for 60 minutes until doubled.
- Mix melted butter, minced garlic, and parsley in a small bowl.
- Divide dough into 6 balls. Roll each out to 1/4 inch thickness.
- Heat a dry skillet over medium-high heat. Cook bread 1-2 minutes per side until bubbly and charred.
- Immediately brush with garlic butter and top with feta cheese.
- Serve warm.
Notes
Do not oil the pan when cooking; a dry hot pan creates the best char. Keep cooked breads wrapped in a towel to stay soft.
