- Boil a large pot of salted water. Cook pasta to al dente. Reserve 1 cup of pasta water, then drain pasta.
- Pat steak cubes dry and season with 1/2 tsp salt and 1/2 tsp pepper.
- Heat olive oil in a large skillet over medium-high heat. Working in batches, sear steak cubes for 1-2 minutes per side. Remove to a plate.
- Lower heat to medium. Add 2 tbsp butter to the skillet. Add 4 cloves of minced garlic and cook for 30-60 seconds.
- Turn off heat. Add steak (and juices) back to the pan. Add remaining 2 tbsp butter and parsley. Toss to coat. Remove steak and all sauce to a bowl.
- In the same skillet over medium heat, melt 2 tbsp butter. Add 3 cloves of minced garlic and cook for 1 minute.
- Pour in heavy cream, 1/2 tsp salt, and 1/4 tsp pepper. Bring to a simmer and cook for 2-3 minutes to thicken.
- Turn heat to low. Add the drained pasta and the 1 cup of grated Parmesan. Toss constantly, adding splashes of reserved pasta water until the sauce is smooth and creamy.
- Serve the pasta immediately, topped with the garlic butter steak bites and extra sauce from the bowl.
Notes
Patting the steak dry is crucial for a good sear. Do not crowd the pan! Grate your own Parmesan cheese for a smooth, non-grainy sauce. Use the reserved pasta water to make the sauce perfectly creamy.
