Ingredients
  

Burger Patties
  • 1 lb ground turkey 93% lean
  • 2 cloves garlic minced
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 0.5 tsp smoked paprika
  • 1 tbsp Worcestershire sauce
Toppings & Assembly
  • 2 cups baby spinach fresh
  • 1 tbsp butter for spinach
  • 4 slices provolone cheese
  • 4 brioche buns toasted
  • 0.5 cup mayonnaise
  • 1 tbsp lemon juice
  • 1 clove garlic grated for aioli

Equipment

  • Cast iron skillet or large pan
  • Mixing bowls

Method
 

  1. Whisk mayonnaise, lemon juice, grated garlic, salt, and pepper in a bowl to make the aioli. Refrigerate.
  2. Sauté spinach in a skillet with 1 tablespoon butter and a smashed garlic clove until wilted. Set aside.
  3. In a bowl, gently mix ground turkey, minced garlic, herbs, salt, pepper, and Worcestershire sauce. Form into 4 patties.
  4. Heat oil in a skillet over medium-high heat. Sear patties for 4-5 minutes per side until golden.
  5. After flipping, top each patty with wilted spinach and a slice of cheese. Cover pan to melt cheese and finish cooking.
  6. Toast brioche buns with butter until golden brown.
  7. Assemble burgers with aioli on the buns, topped with the cheesy spinach turkey patty.
  8. Serve warm immediately.

Notes

Ensure the internal temperature of the turkey reaches 165°F (74°C). Do not press down on the burgers while cooking to retain juices.
