Ingredients
  

Beef Filling
  • 1 lb ground beef 85/15 chuck preferred
  • 4 tbsp unsalted butter divided
  • 4 cloves garlic minced
  • 1 tsp onion powder
  • 0.5 tsp smoked paprika
  • 0.33 cup honey
  • 0.5 cup BBQ sauce thick and smoky
  • 1 tbsp soy sauce
  • 1 tbsp apple cider vinegar
Assembly
  • 8-10 flour tortillas warmed
  • 1 cup cheddar cheese shredded
  • 0.25 cup fresh cilantro chopped

Method
 

  1. Heat a large skillet over medium-high heat. Add ground beef and cook, breaking it apart, until browned (6-8 minutes).
  2. Drain excess fat from the pan, leaving the beef inside.
  3. Push beef to the side. Add 2 tbsp butter to the center. Once melted, sauté minced garlic for 45 seconds until fragrant.
  4. Mix garlic into beef. Season with onion powder, smoked paprika, salt, and pepper.
  5. Reduce heat to medium-low. Add remaining butter, BBQ sauce, soy sauce, vinegar, and honey. Stir to combine.
  6. Simmer gently for 5-7 minutes until the sauce reduces to a thick, sticky glaze.
  7. Serve warm beef mixture in tortillas topped with shredded cheese and cilantro.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat slowly on the stove, adding a splash of water if the sauce is too thick.
