Ingredients

Garlic Butter
  • 1/2 cup salted butter softened
  • 3 cloves garlic minced
  • 2 tbsp fresh parsley chopped
  • 1 tbsp Parmesan cheese grated (optional)
  • 1/4 tsp black pepper
Sandwiches
  • 8 slices thick-cut bread Sourdough or Texas Toast
  • 2 cups shredded cheese blend Mozzarella, Provolone, Fontina

Equipment

  • Large Skillet or Griddle
  • Small bowl
  • Spatula
  • Cheese grater

Method

  1. In a small bowl, mix softened butter, minced garlic, chopped parsley, Parmesan, and pepper until combined.
  2. Place cheese between bread slices to form four sandwiches.
  3. Spread garlic butter on the top slice of each sandwich.
  4. Heat a skillet over medium-low heat. Place sandwiches, butter-side down, in the skillet.
  5. Spread the remaining garlic butter on the top (unbuttered) side of the sandwiches in the pan.
  6. Cook for 3-4 minutes until golden brown, then flip and cook for another 2-3 minutes until the cheese is melted.
  7. Serve immediately.

Notes

Grate your own cheese for the best melting results. Cook slowly on medium-low heat to prevent the garlic from burning before the cheese melts.
