- Simmer blueberries, 2 tbsp sugar, and lemon juice in a saucepan for 5-7 minutes until burst. Stir in cornstarch slurry and cook 1-2 minutes until thickened. Cool completely in fridge.
- Beat softened cream cheese until smooth. Beat in powdered sugar, vanilla, and salt until fluffy.
- Dollop cooled blueberry sauce over cream cheese mixture. Gently fold 3-4 times to create swirls. Do not overmix.
- Freeze the mixture in the bowl for 30-45 minutes so it firms up enough to scoop.
- Mix graham cracker crumbs, melted butter, and 1 tbsp sugar in a small bowl.
- Scoop tablespoon-sized balls of cheesecake mixture, roll quickly to shape, then coat in graham crumbs. Place on parchment-lined baking sheet.
- Freeze for at least 2 hours until solid. Transfer to airtight container and store in freezer. Serve frozen.
Notes
Total time includes freezing time. Ensure the blueberry sauce is completely cold before adding to the cream cheese to prevent melting the mixture. These must be stored in the freezer.
