French Onion Seared Gnocchi

Pillowy potato gnocchi pan-seared in brown butter and tossed with sweet caramelized onions, fresh thyme, and melted Parmesan cheese.

Ingredients
  

Caramelized Onion Base
  • 3 large yellow onions thinly sliced
  • 2 tbsp unsalted butter
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 0.5 cup white wine dry, or vegetable broth
  • 1 tbsp fresh thyme leaves
Gnocchi & Finish
  • 1 lb potato gnocchi shelf-stable or refrigerated
  • 2 tbsp unsalted butter for searing
  • 0.5 cup Parmesan cheese freshly grated
  • 1 pinch salt and black pepper to taste

  • Large skillet or Dutch oven
  • Chef's knife
  • Cutting board
  • Cheese grater

Method
 

  1. Heat 2 tbsp butter and olive oil in a large skillet over medium heat. Add sliced onions.
  2. Cook onions slowly, reducing heat to medium-low, stirring occasionally for 30-40 minutes until deep golden brown.
  3. Add minced garlic and thyme to the onions; cook for 1 minute until fragrant.
  4. Deglaze the pan with wine or broth, scraping up browned bits. Simmer until liquid evaporates. Remove onions from pan.
  5. In the same pan, melt remaining 2 tbsp butter over medium-high heat until foaming.
  6. Add gnocchi in a single layer. Sear undisturbed for 3 minutes until crispy, then flip and cook 2 more minutes.
  7. Return the caramelized onions to the pan with the gnocchi. Toss to combine and reheat.
  8. Remove from heat, toss with half the parmesan cheese, and season generously with black pepper.
  9. Serve immediately topped with remaining cheese and fresh thyme sprigs.

Notes

Be patient with the onions; high heat will burn them before they caramelize. For extra richness, add a splash of cream at the end.
