- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, combine ground beef, panko, egg, garlic, ginger, soy sauce, and pepper. Mix gently with hands until just combined.
- Roll the mixture into 1.5-inch balls and place them on the prepared baking sheet.
- Bake for 18-20 minutes until cooked through and slightly browned. (Optional: Broil for the last minute for extra color).
- While meatballs bake, whisk together mayonnaise, Sriracha, sweet chili sauce, and vinegar in a small bowl until smooth.
- Transfer cooked meatballs to a serving bowl.
- Drizzle generous amounts of the sauce over the meatballs.
- Top with chopped green onions and chili flakes. Serve warm.
Notes
For a main dish, serve these over steamed jasmine rice. To make them gluten-free, use gluten-free panko and tamari instead of soy sauce.
