Festive Cranberry & Cream Cheese Truffles

Decadent no-bake cheesecake bites packed with dried cranberries, coated in rich dark chocolate, and garnished for the holidays.

Ingredients
  

Truffle Filling
  • 8 oz cream cheese softened
  • 0.5 cup powdered sugar
  • 1 cup white chocolate chips melted
  • 1 cup graham cracker crumbs
  • 0.75 cup dried cranberries chopped
  • 1 tsp vanilla extract
  • 1 tbsp orange zest optional
Coating & Garnish
  • 10 oz dark chocolate melting wafers or bar
  • 1 tsp coconut oil optional
  • 8 glacĂ© cherries halved
  • 2 tbsp desiccated coconut or powdered sugar

Equipment

  • Hand mixer or stand mixer
  • Baking sheet
  • Parchment paper
  • Microwave-safe bowl

Method
 

  1. Beat softened cream cheese, powdered sugar, vanilla, and zest until smooth.
  2. Mix in melted white chocolate, then fold in cracker crumbs and chopped cranberries.
  3. Refrigerate mixture for 1 hour until firm.
  4. Scoop tablespoons of mixture and roll into balls. Place on parchment-lined sheet.
  5. Freeze balls for 30 minutes to firm up.
  6. Melt dark chocolate (and coconut oil) in the microwave until smooth.
  7. Dip cold balls into chocolate, tap off excess, and place back on parchment.
  8. Immediately top with a cherry half and sprinkle with coconut before chocolate sets.
  9. Chill until set. Store in the refrigerator.

Notes

Work quickly when dipping as the cold truffle will set the chocolate fast. Use a toothpick or fork for dipping.
