Method
- Preheat oven to 375°F (190°C) and line a large baking sheet with parchment paper.
- Arrange baguette slices on the baking sheet and lightly brush tops with olive oil.
- Bake for 6-8 minutes until lightly toasted. Remove from oven.
- Place a slice of Brie on each toasted bread round.
- Return to oven and bake for 5-7 minutes until Brie is melted and bubbling.
- Remove from oven and immediately top each with a teaspoon of cranberry sauce and a sprinkle of fresh thyme.
- Serve warm immediately on a platter garnished with extra thyme.
Notes
For easier slicing, freeze the baguette for 15-20 minutes before cutting. You can leave the rind on the Brie or trim it off, depending on preference. Homemade cranberry sauce can be used for extra flavor.
