Festive Cranberry Brie Crostini with Fresh Thyme

Ingredients
  

Crostini Base
  • 1 medium French baguette sliced into 24 rounds
  • 0.25 cup extra virgin olive oil for brushing
Toppings
  • 12 oz Brie cheese cold, sliced into 24 pieces
  • 1 cup whole berry cranberry sauce
  • 2 tbsp fresh thyme leaves plus extra sprigs for garnish

Equipment

  • Parchment paper
  • Bread knife

Method
 

  1. Preheat oven to 375°F (190°C) and line a large baking sheet with parchment paper.
  2. Arrange baguette slices on the baking sheet and lightly brush tops with olive oil.
  3. Bake for 6-8 minutes until lightly toasted. Remove from oven.
  4. Place a slice of Brie on each toasted bread round.
  5. Return to oven and bake for 5-7 minutes until Brie is melted and bubbling.
  6. Remove from oven and immediately top each with a teaspoon of cranberry sauce and a sprinkle of fresh thyme.
  7. Serve warm immediately on a platter garnished with extra thyme.

Notes

For easier slicing, freeze the baguette for 15-20 minutes before cutting. You can leave the rind on the Brie or trim it off, depending on preference. Homemade cranberry sauce can be used for extra flavor.
