- Toast the almonds in a dry skillet over medium heat for 3-5 minutes until fragrant. Set aside to cool.
- Finely shred the red cabbage and Brussels sprouts using a knife or food processor.
- In a large bowl, combine the shredded cabbage, sprouts, dried cranberries, cooled almonds, and parsley.
- In a jar, whisk together olive oil, apple cider vinegar, maple syrup, Dijon mustard, garlic, salt, and pepper.
- Pour the dressing over the salad and toss well to coat.
- Let stand for 15 minutes before serving to allow flavors to meld.
Notes
You can substitute pecans or walnuts for the almonds. For a creamy version, add a tablespoon of mayonnaise or greek yogurt to the dressing.
