Ingredients

Bread and Crust
  • 1 large hero or sub roll roughly 10-12 inches
  • 2 tbsp everything bagel seasoning
  • 2 tbsp olive oil to toast
Meats and Cheese
  • 4 oz Genoa salami thinly sliced
  • 3 oz pepperoni thinly sliced
  • 3 oz capicola or prosciutto thinly sliced
  • 4 slices provolone or mozzarella cheese assumed melted
Cold Toppings
  • 2 cups shredded iceberg lettuce fresh and crisp
  • 2 medium tomatoes thinly sliced
  • 1 small red onion thinly sliced into rings
  • 4-6 whole pepperoncini to serve on the side
Dressing and Finishing Touches
  • 3 tbsp sub vinaigrette olive oil and red wine vinegar base
  • 0.5 tsp dried oregano
  • 0.25 tsp red pepper flakes for spice, adjust to taste
  • to taste salt and pepper

Equipment

  • Baking sheet
  • Deli knife or large chef's knife
  • Whisk

Method

  1. Preheat your oven to 425°F (220°C). Cut the hero roll open, ensuring it remains connected on one side.
  2. Brush the exterior crust with olive oil and press the everything bagel seasoning onto the top surface. Drizzle or brush a small amount of oil onto the cut interior faces.
  3. Layer the provolone or mozzarella cheese over the interior of the bread, followed by the folded or rolled cured meat mosaic (Genoa salami, capicola, and pepperoni). Use enough to fill but not hang over.
  4. Place the open sandwich on a baking sheet and bake for 5-7 minutes, until the cheese is melted and the bread is golden and toasted.
  5. Immediately after removing from the oven, layer on the cold fresh toppings: shredded iceberg lettuce, sliced tomatoes, and red onion rings.
  6. In a separate bowl, whisk together the sub vinaigrette, dried oregano, and red pepper flakes. Drizzle this dressing evenly over the cold vegetable layer.
  7. Close the sandwich, secure with skewers if necessary, and serve immediately with whole pepperoncini on the side.

Notes

Reheat in an air fryer or oven to restore crunch. Avoid microwave to prevent sogginess. This sandwich is best enjoyed fresh.
