Ingredients
  

Jelly Base
  • 2 cups pure filtered water or bottled spring water
  • 1.5 tsp agar agar powder pure powder, not flakes
  • 0.25 cup white granulated sugar adjust to taste
  • 1 tbsp clear flavored syrup elderflower, lychee, or clear vanilla
Botanicals
  • 6-8 edible flowers pansies, violas, etc., clean and dry

Equipment

  • Silicone half-sphere mold (6 cavities)
  • Small saucepan
  • Whisk
  • Toothpicks

Method
 

  1. Ensure your silicone mold is perfectly clean and dry. Place one edible flower face-down in the bottom of each cavity.
  2. In a saucepan, whisk the cold filtered water and agar agar powder together until dissolved.
  3. Bring the mixture to a gentle boil over medium heat, stirring constantly. Let it simmer for exactly 2 minutes to activate the agar.
  4. Stir in the sugar and clear flavoring syrup until completely dissolved. Remove from heat and let sit for 2 minutes. Skim off any surface bubbles.
  5. Carefully and slowly pour the warm mixture into the silicone molds over the flowers. Use a toothpick to pop any bubbles or adjust the flower placement.
  6. Let set at room temperature for 20 minutes, then refrigerate for at least 2 hours until completely firm and chilled.
  7. Carefully pop the jelly domes out of the mold onto a serving plate. Serve immediately, optionally with a drizzle of clear syrup or a dusting of roasted soybean flour.

Notes

Always ensure your flowers are explicitly sold as 'edible' and are pesticide-free. Do not substitute gelatin, as it will not provide the same crystal-clear finish or texture.
