Ingredients
  

Base
  • 1 lb ground turkey 93% lean
  • 1 tbsp olive oil
  • 1 large yellow onion diced
  • 3 cloves garlic minced
Spice & Sauce
  • 2-3 chipotle peppers in adobo finely chopped
  • 1 tbsp adobo sauce from the can
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 can crushed tomatoes 28 oz
  • 1 can kidney beans 15 oz, drained and rinsed
  • 1 cup chicken broth

Equipment

  • Large Pot or Dutch Oven
  • Wooden Spoon

Method
 

  1. Heat olive oil in a large pot over medium heat. Add onion and sauté for 5 minutes until soft.
  2. Add garlic and ground turkey. Cook until turkey is browned and no longer pink, breaking it up with a spoon.
  3. Stir in the chopped chipotles, adobo sauce, cumin, smoked paprika, salt, and pepper. Cook for 1 minute to bloom spices.
  4. Pour in the crushed tomatoes, kidney beans, and chicken broth. Stir well.
  5. Bring to a boil, then reduce heat to low. Cover and simmer for 20-30 minutes.
  6. Taste and adjust salt or spice level. Serve hot with your favorite toppings.

Notes

Freeze individual portions for quick lunches. The flavor improves the next day!
