Ingredients

Cookie Dough
  • 0.5 cup unsalted butter softened
  • 0.5 cup light brown sugar packed
  • 0.33 cup granulated sugar
  • 1 large egg room temp
  • 1 egg yolk room temp
  • 1 tsp vanilla extract
  • 1.25 cups all-purpose flour
  • 1 tsp cornstarch
  • 0.5 tsp baking soda
  • 1 cup semi-sweet chocolate chips
Frosting (Optional)
  • 0.5 cup butter softened
  • 1.5 cups powdered sugar
  • 1 tbsp heavy cream

Equipment

  • 12-inch Pizza Pan or 9-inch Cake Pan
  • Electric Mixer
  • Large mixing bowl

Method

  1. Preheat oven to 350°F (175°C). Grease a 12-inch pizza pan or 9-inch round cake pan.
  2. Cream softened butter, brown sugar, and granulated sugar until fluffy (2-3 mins).
  3. Beat in egg, egg yolk, and vanilla until combined.
  4. Whisk flour, cornstarch, baking soda, and salt. Gradually add to wet ingredients, mixing until just combined.
  5. Fold in chocolate chips. Spread dough onto prepared pan, leaving 1 inch of space around edges.
  6. Bake for 18-22 minutes until edges are golden and center is set but soft.
  7. Cool completely before decorating with frosting.

Notes

Do not overbake, or the cookie will become hard. The center should look slightly underdone when removing from the oven.
