- Line an 8x8 inch square baking pan with parchment paper, leaving overhang on the sides. Lightly grease.
- In a large microwave-safe bowl, combine white chocolate chips, sweetened condensed milk, and butter.
- Microwave in 30-second intervals, stirring vigorously after each, until completely melted and smooth (approx. 90 seconds total).
- Stir in the salt, strawberry extract, and pink food coloring until the desired color is reached.
- Let the mixture sit at room temperature for 2-3 minutes to cool slightly so it doesn't melt the marshmallows.
- Gently fold in the mini marshmallows until they are evenly distributed but not melted.
- Pour the mixture into the prepared pan and smooth the top with a spatula.
- Refrigerate for at least 2 hours, or until the fudge is set and firm.
- Remove from pan using parchment handles, cut into squares, and dust with powdered sugar if desired.
Notes
Work quickly once you add the marshmallows. If the mixture gets too stiff, you waited too long to add them. Store in an airtight container in the fridge.
