Ingredients
  

Smoothie Base
  • 2 packs frozen pink dragon fruit or 2 cups cubed
  • 1.5 cups frozen pineapple chunks
  • 1 banana ripe, frozen or fresh
  • 1 cup coconut milk or almond milk
  • 1 tbsp lime juice
The Swirl & Garnish
  • 0.5 cup coconut yogurt or greek yogurt
  • 0.25 cup raspberries fresh
  • 1 wedge pineapple
  • 1 sprig fresh mint

Equipment

  • High-speed blender
  • Spoon (for swirling)
  • Glassware

Method
 

  1. Spread spoonfuls of yogurt or coconut cream against the inside walls of the serving glasses to create the white swirl effect.
  2. Combine frozen dragon fruit, pineapple, banana, lime juice, and coconut milk in a blender.
  3. Blend on high until smooth and thick. Add more liquid sparingly if needed to blend.
  4. Pour the pink smoothie mixture into the prepared glasses, allowing it to fill spaces between the yogurt swirls.
  5. Top with crushed ice, fresh raspberries, a pineapple wedge, and a sprig of mint.
  6. Serve immediately with a straw.

Notes

For a cocktail version, add 2 oz of white rum. Use frozen fruit for a thick, frosty texture without watering it down with too much ice.
