Method
- Place eggs in a saucepan, cover with water, and bring to a boil. Remove from heat, cover, and let sit for 12 minutes.
- Transfer eggs to an ice bath to cool completely. Peel the eggs.
- Slice eggs in half lengthwise. Remove yolks and place in a bowl; set whites aside.
- Mash yolks with mayonnaise, mustard, pickle juice, chopped dill, salt, and pepper until smooth.
- Pipe or spoon the mixture into the egg white cavities.
- Top each egg with a pickle chip, fresh dill sprig, chives, and a dusting of paprika.
Notes
Using a star tip for piping gives the filling the professional texture seen in photos. Older eggs are easier to peel than very fresh ones.
