Deviled Egg Smoked Paprika Potato Salad

Soft potatoes, chunky eggs, and a zesty, smoked-paprika-spiked dressing make this the perfect comforting side for any picnic or BBQ.

Ingredients
  

Dressing
  • 1 cup mayonnaise
  • 0.5 cup sour cream or plain Greek yogurt
  • 2 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 1.5 tsp smoked paprika plus extra for garnish
  • 0.5 tsp cayenne pepper optional, for heat
  • 0.5 tsp salt adjust to taste
  • 0.25 tsp black pepper freshly ground
Salad Base
  • 3 lbs baby gold or Yukon potatoes cut into 1-inch chunks
  • 6 large eggs hard-boiled and peeled
  • 1 bunch green onions sliced, white and green parts separated
  • 0.5 cup fresh parsley finely chopped

Method
 

  1. Place potato chunks in a large pot and cover with cold salted water by 1 inch. Bring to a boil, then reduce heat and simmer for 15-20 minutes until fork-tender. Drain, rinse with cool water, and let cool completely.
  2. While potatoes cook, hard-boil the eggs (place eggs in cold water, bring to boil, cover and remove from heat for 12 minutes). Peel and cool the eggs.
  3. In a large mixing bowl, whisk together the mayonnaise, sour cream, Dijon mustard, apple cider vinegar, smoked paprika, cayenne (if using), salt, and black pepper until smooth.
  4. Slice the hard-boiled eggs. Quarter or chop into larger chunks. Finely slice the white parts of the green onions and add to the dressing; keep green parts for garnish.
  5. Add the cooled potatoes and egg chunks to the bowl with the dressing. Fold gently with a spatula until everything is evenly coated.
  6. Transfer to a serving bowl. Garnish generously with the green parts of the sliced scallions, chopped parsley, and an extra dusting of smoked paprika.
  7. Cover and refrigerate for at least 1 hour before serving to allow flavors to meld. Best served chilled.

Notes

For the best flavor, make this salad at least 4 hours in advance or overnight. Replace the cayenne with more paprika if you prefer no heat.
