Ingredients
  

Sliders
  • 1 lb ground beef 80/20 lean
  • 12 mini brioche buns sliced
  • 6 slices cheddar cheese quartered
  • 2 tbsp butter melted
  • 1 tsp salt
  • 1 tsp black pepper
Garlic Aioli
  • 0.5 cup mayonnaise
  • 2 cloves garlic minced
  • 1 tsp lemon juice

Equipment

  • Large Skillet or Griddle
  • Spatula
  • Small mixing bowl

Method
 

  1. Whisk mayonnaise, minced garlic, lemon juice, salt, and pepper in a bowl to make the aioli. Refrigerate.
  2. Brush cut sides of slider buns with melted butter and toast in a skillet until golden.
  3. Divide beef into 12 balls. Season with salt and pepper.
  4. Heat oil in a large skillet over medium-high heat. Smash beef balls into patties in the pan.
  5. Cook for 2 minutes, flip, add cheese, and cook 1-2 minutes more until cheese melts.
  6. Assemble sliders with a generous smear of garlic aioli on the buns.
  7. Serve hot and messy.

Notes

Don't overmix the ground beef or the burgers will be tough. Make the aioli ahead of time for better flavor.
