Delicious Chicken Garlic Sandwich

A gourmet grilled cheese sandwich with seasoned shredded chicken, melted cheese, and a crispy exterior brushed with homemade garlic butter.

Ingredients
  

  • 4 slices Thick-sliced Bread Sourdough or Texas Toast recommended
  • 1.5 cups Cooked Chicken shredded
  • 1.5 cups Shredded Cheese Blend Mozzarella, Provolone, or Cheddar
For the Garlic Butter:
  • 4 Tbsp Unsalted Butter softened
  • 2 cloves Garlic minced, OR 1 tsp Garlic Powder
  • 1 tsp Fresh Parsley chopped, OR 1/2 tsp Dried Italian Seasoning
  • Pinch Salt and Black Pepper to taste

Method
 

  1. In a small bowl, combine the softened butter, minced garlic, parsley (or herbs), salt, and pepper until smooth to create the garlic butter.
  2. Toss the shredded chicken with a pinch of salt and about 1 teaspoon of the prepared garlic butter mixture for flavor.
  3. Butter the outside of two bread slices with the garlic butter. Flip the slices and layer 1/4 of the cheese, then 1/2 of the chicken, and another 1/4 of the cheese on the inside.
  4. Place the remaining two slices of bread on top, buttering the final outer sides with the remaining garlic butter.
  5. Preheat a large skillet or griddle over medium-low heat. Place the sandwiches on the skillet.
  6. Grill for 4-6 minutes per side, pressing gently, until the bread is deeply golden brown and the cheese is completely melted and gooey.
  7. Remove from skillet, slice diagonally, and serve immediately.

Notes

Cook over medium-low heat to ensure the cheese melts fully before the bread burns. For an extra gooey center, cover the skillet with a lid for the last two minutes of cooking. Use pre-cooked rotisserie chicken for the best flavor and speed.
