- In a small bowl, combine the softened butter, minced garlic, parsley (or herbs), salt, and pepper until smooth to create the garlic butter.
- Toss the shredded chicken with a pinch of salt and about 1 teaspoon of the prepared garlic butter mixture for flavor.
- Butter the outside of two bread slices with the garlic butter. Flip the slices and layer 1/4 of the cheese, then 1/2 of the chicken, and another 1/4 of the cheese on the inside.
- Place the remaining two slices of bread on top, buttering the final outer sides with the remaining garlic butter.
- Preheat a large skillet or griddle over medium-low heat. Place the sandwiches on the skillet.
- Grill for 4-6 minutes per side, pressing gently, until the bread is deeply golden brown and the cheese is completely melted and gooey.
- Remove from skillet, slice diagonally, and serve immediately.
Notes
Cook over medium-low heat to ensure the cheese melts fully before the bread burns. For an extra gooey center, cover the skillet with a lid for the last two minutes of cooking. Use pre-cooked rotisserie chicken for the best flavor and speed.
