Ingredients

Pumpkin Batter
  • 1.75 cups all-purpose flour
  • 2 tsp pumpkin pie spice
  • 1 tsp baking soda
  • 0.5 cup unsalted butter melted
  • 1 cup granulated sugar
  • 0.5 cup brown sugar packed
  • 1 cup pumpkin puree canned
  • 1 large egg
Chocolate Swirl
  • 0.5 cup semi-sweet chocolate chips
  • 1 tbsp butter
Ganache Topping
  • 0.5 cup chocolate chips
  • 0.25 cup heavy cream

Equipment

  • 8x8 inch baking pan
  • Mixing bowls
  • Whisk
  • Parchment paper

Method

  1. Preheat oven to 350°F (175°C). Line an 8x8 pan with parchment paper.
  2. Whisk flour, baking soda, spices, and salt in a bowl.
  3. In a separate bowl, whisk melted butter and sugars until smooth. Beat in egg and pumpkin puree.
  4. Fold dry ingredients into the wet mixture until just combined.
  5. Melt chocolate chips with 1 tbsp butter. Mix with 3/4 cup of the pumpkin batter to create the swirl batter.
  6. Alternate spoonfuls of pumpkin batter and chocolate batter into the pan. Swirl gently with a knife.
  7. Bake for 25-30 minutes until a toothpick comes out with moist crumbs. Cool completely.
  8. Make ganache by pouring hot heavy cream over chocolate chips. Whisk until smooth.
  9. Drizzle over cooled bars and let set before slicing.

Notes

Do not over-swirl the batter, or the colors will muddy. Store in the fridge for a fudgier texture.
