Decadent Layered Strawberry Sundae

Ingredients
  

Strawberry Compote
  • 1 lb strawberries fresh or frozen, diced
  • 0.25 cup granulated sugar
  • 1 tbsp lemon juice freshly squeezed
  • 0.5 tsp vanilla extract
Sundae Assembly
  • 1 pint vanilla bean ice cream
  • 1 cup heavy whipping cream cold
  • 2 tbsp powdered sugar
  • 0.5 tsp vanilla extract
  • 2 whole strawberries for garnish

Equipment

  • Medium saucepan
  • Tall serving glasses
  • Hand mixer or stand mixer
  • Piping Bag (optional)

Method
 

  1. Combine diced strawberries, granulated sugar, and lemon juice in a saucepan. Bring to a boil, then reduce heat and simmer for 10-12 minutes until thickened.
  2. Remove compote from heat, stir in 1/2 tsp vanilla extract, and let cool completely in the refrigerator.
  3. In a chilled bowl, whip the heavy cream, powdered sugar, and remaining 1/2 tsp vanilla extract until stiff peaks form.
  4. To assemble, spoon a layer of chilled strawberry compote into the bottom of tall glasses.
  5. Add a large scoop of vanilla ice cream, followed by another layer of strawberry compote, letting it drip down the sides.
  6. Repeat with remaining ice cream and compote until the glass is full.
  7. Top with a massive swirl of freshly whipped cream and garnish the rim with a whole strawberry. Serve immediately.

Notes

The strawberry compote can be made up to 5 days in advance and stored in an airtight container in the refrigerator.
