- Mix crushed cookies and melted butter. Press into a 9-inch pan to form the crust. Freeze for 20 minutes.
- Whip 1 cup of cold heavy cream until stiff peaks form. Set aside.
- Beat softened cream cheese and peanut butter until smooth. Add powdered sugar and vanilla, beating until fluffy.
- Gently fold the whipped cream into the peanut butter mixture until well combined with no streaks.
- Pour the filling into the chilled crust and smooth the top. Refrigerate for at least 4 hours.
- For the ganache, heat 1/2 cup cream until simmering and pour over chocolate chips. Let sit 5 minutes, then whisk until smooth. Cool slightly.
- Pour the ganache over the chilled pie. Chill for 30 minutes to set.
- Garnish with piped frosting and chopped peanut butter cups. For the drip effect, drizzle extra warm ganache over individual slices before serving.
