- Pat beef cubes dry and toss with salt, pepper, and onion powder.
- Heat olive oil in a large skillet over medium-high heat. Working in batches, sear the beef cubes for 2-3 minutes per side until a dark brown crust forms. Transfer seared beef to the slow cooker.
- In the same skillet, turn heat to low and deglaze with beef broth, scraping up all the browned bits. Pour this liquid over the beef.
- Add the halved baby potatoes to the slow cooker and toss gently with the beef.
- In a small bowl, combine the cubed butter, minced garlic, dried parsley, and dried oregano. Microwave for 60-90 seconds until butter is melted and fragrant.
- Pour the garlic butter mixture evenly over the beef and potatoes. Do not stir.
- Cover and cook on LOW for 5-6 hours or HIGH for 3-4 hours, until beef and potatoes are fork-tender.
- Gently stir, garnish with fresh parsley, and serve hot.
Notes
The most important step for flavor is searing the beef in a skillet before adding it to the crockpot. Don't skip it! Using a whole head of garlic provides a rich, mellow flavor, not a sharp one.
