- Press the tofu: Wrap the tofu block in paper towels and place a heavy skillet on top for 20-30 minutes to extract excess water. Cut into 1-inch cubes.
- Coat the tofu: In a bowl, toss the tofu cubes heavily in cornstarch until fully coated. Shake off excess.
- Fry the tofu: Heat oil in a large skillet over medium-high heat. Pan-fry the tofu in a single layer until golden and crispy on all sides, about 8 minutes total. Transfer to a paper towel-lined plate.
- Make glaze: In a small saucepan, combine soy sauce, brown sugar, mirin, and ginger. Simmer to dissolve sugar. Stir in the cornstarch slurry and cook for 1 minute until thickened.
- Make spicy mayo: Whisk together mayonnaise and sriracha in a small bowl.
- Assemble: Toss the fried tofu in the warm teriyaki glaze. Serve over rice, drizzled with spicy mayo and topped with green onions and sesame seeds.
Notes
Use vegan mayo to make this recipe entirely plant-based. Pressing the tofu is crucial for crispiness. Do not overcrowd the pan when frying.
