- In a small saucepan, combine dark BBQ base, maple syrup, balsamic glaze, soy sauce, smoked paprika, and garlic powder. Simmer for 8-10 minutes until thickened significantly.
- Set up a standard three-step breading station: seasoned flour, egg wash, and textured panko blend. Ensure panko has the remaining cajun spice blend.
- Pat patties dry. Coat each completely in flour, then egg wash, then press firmly into the textured panko. For maximum texture, you can double-dip the final panko layer.
- Deep-fry the patties in hot oil (360°F/180°C) for 4-6 minutes until golden brown and fully cooked. Drain on a wire rack.
- While hot, submerge or heavily brush each crispy patty with the warm stick glaze until fully saturated. Remove from glaze.
- Place glazed patties on a tray and top each with 2 slices of sharp cheddar. Torch or bake until completely melted and dripping.
- Toast the brioche buns. Spread aioli on the bottom bun as a barrier. Place the hot, stick-glaze patty on the aioli. Close the burger.
- Serve immediately while warm and messy.
