Ingredients
  

Base
  • 12 oz wonton wrappers cut diagonally into triangles
  • 1 tbsp olive oil for brushing
Topping
  • 10 oz frozen spinach thawed and squeezed very dry
  • 8 oz cream cheese softened
  • 0.5 cup marinated artichoke hearts chopped
  • 0.25 cup sour cream
  • 1.5 cups mozzarella cheese shredded
  • 0.5 cup Parmesan cheese grated
  • 2 cloves garlic minced
  • 0.5 tsp red pepper flakes optional

  • Kitchen towel (for squeezing spinach)

Method
 

  1. Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. Arrange wonton triangles on baking sheets. Brush lightly with oil. Bake for 5-6 minutes until just starting to crisp. Remove from oven.
  3. In a bowl, mix cream cheese, sour cream, dried spinach, artichokes, garlic, red pepper flakes, Parmesan, and 1 cup of mozzarella.
  4. Spoon a teaspoon of mixture onto each par-baked wonton chip.
  5. Sprinkle the remaining mozzarella over the tops.
  6. Bake for another 8-10 minutes until wontons are golden brown and cheese is bubbly.
  7. Cool for a few minutes to crisp up further before serving.

Notes

Ensure spinach is extremely dry to prevent soggy chips. Use a kitchen towel to wring out all liquid.
