Ingredients
  

Cauliflower
  • 1 head cauliflower cut into florets
  • 3 tbsp olive oil
  • 1 tbsp cornstarch for crispiness
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 0.5 tsp cumin
  • 0.5 tsp turmeric optional for color
  • 1 pinch salt and pepper to taste
Spicy Aioli
  • 0.5 cup mayonnaise
  • 1 tbsp lemon juice
  • 1 clove garlic minced
  • 1 tsp sriracha or chili flakes adjust to taste
  • 1 tbsp parsley chopped, for garnish

  • Parchment paper
  • Large mixing bowl
  • Whisk

Method
 

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Wash cauliflower and dry thoroughly. Cut into even bite-sized florets.
  3. In a large bowl, whisk olive oil, cornstarch, paprika, garlic powder, cumin, turmeric, salt, and pepper.
  4. Add cauliflower florets to the bowl and toss until evenly coated with the spice mixture.
  5. Spread cauliflower on the baking sheet in a single layer. Do not crowd the pan.
  6. Roast for 25-30 minutes, flipping halfway through, until edges are crispy and golden brown.
  7. Meanwhile, mix mayonnaise, lemon juice, garlic, and sriracha in a small bowl.
  8. Remove cauliflower from oven, garnish with parsley, and serve hot with the dipping sauce.

Notes

For extra crunch, broil for 1-2 minutes at the end of cooking. Ensure cauliflower is completely dry before seasoning.
