- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Wash cauliflower and dry thoroughly. Cut into even bite-sized florets.
- In a large bowl, whisk olive oil, cornstarch, paprika, garlic powder, cumin, turmeric, salt, and pepper.
- Add cauliflower florets to the bowl and toss until evenly coated with the spice mixture.
- Spread cauliflower on the baking sheet in a single layer. Do not crowd the pan.
- Roast for 25-30 minutes, flipping halfway through, until edges are crispy and golden brown.
- Meanwhile, mix mayonnaise, lemon juice, garlic, and sriracha in a small bowl.
- Remove cauliflower from oven, garnish with parsley, and serve hot with the dipping sauce.
Notes
For extra crunch, broil for 1-2 minutes at the end of cooking. Ensure cauliflower is completely dry before seasoning.
