Ingredients
  

Sandwich Assembly
  • 2 slices sourdough bread thick cut
  • 2 tbsp basil pesto homemade or jarred
  • 4 oz fresh mozzarella cheese sliced and patted dry
  • 2 tbsp unsalted butter softened, or mayonnaise
  • 1 pinch salt and pepper to taste

Equipment

  • Cast-iron skillet or non-stick pan
  • Spatula
  • Butter knife

Method
 

  1. Pat the fresh mozzarella slices dry with a paper towel to remove excess moisture.
  2. Spread softened butter (or mayonnaise) on one side of each slice of sourdough bread.
  3. Flip the bread over and spread 1 tablespoon of pesto on the unbuttered side of each slice.
  4. Layer the mozzarella cheese on one slice over the pesto, season with pepper, and top with the second slice (pesto side in, butter side out).
  5. Heat a skillet over medium-low heat. Place the sandwich in the pan.
  6. Cook for 4-5 minutes until the bottom is deep golden brown and crispy.
  7. Flip carefully and cook for another 3-4 minutes until the cheese is fully melted.
  8. Remove from heat, let rest for 1 minute, slice in half and serve.

Notes

For a crispier crust, use mayonnaise instead of butter. Add sliced tomatoes or balsamic glaze for extra flavor.
