Ingredients
  

Pastry & Filling
  • 2 sheets puff pastry thawed (approx 17.3 oz total)
  • 1.5 cups Parmesan cheese finely grated
  • 1 tbsp fresh rosemary finely chopped
  • 0.5 tsp black pepper freshly cracked
Egg Wash & Topping
  • 1 large egg
  • 1 tbsp water
  • 1 tbsp flaky sea salt for sprinkling

Method
 

  1. Preheat oven to 400°F (200°C) and line two baking sheets with parchment paper.
  2. Whisk egg and water together to create an egg wash.
  3. On a floured surface, roll out one sheet of puff pastry slightly to smooth seams.
  4. Brush pastry with egg wash. Combine Parmesan, rosemary, and pepper, then sprinkle over the pastry.
  5. Roll out the second pastry sheet and place it on top of the cheese layer. Roll firmly to seal.
  6. Cut into 3/4-inch wide strips. Twist each strip into a spiral and place on baking sheets.
  7. Brush tops with remaining egg wash and sprinkle with flaky sea salt. Chill for 15 minutes.
  8. Bake for 15-20 minutes until puffed and deeply golden brown. Cool on a wire rack.

Notes

Chilling the twists before baking is crucial for ensuring the puff pastry rises properly and doesn't melt too quickly. Use freshly grated cheese for the best melting and flavor.
