Method
- Dredge chicken in flour, then egg, then the Parmesan-breadcrumb mixture, pressing firmly to adhere.
- Heat oil and butter in a skillet over medium-high. Fry chicken 4-5 minutes per side until golden and cooked through. Set aside on a wire rack.
- In the same pan, sauté minced garlic for 1 minute until fragrant.
- Deglaze with white wine or broth, scraping up the browned bits. Reduce liquid by half.
- Stir in heavy cream and remaining broth. Simmer for 3-5 minutes until thickened.
- Whisk in Parmesan cheese and parsley until the sauce is smooth and glossy.
- Pour the sauce over the crispy chicken and serve immediately.
Notes
Use a wire rack to keep the chicken from getting soggy while making the sauce.
