Ingredients
  

Chicken & Coating
  • 2 large chicken breasts halved and pounded thin
  • 0.5 cup all-purpose flour
  • 2 eggs beaten
  • 1 cup Panko breadcrumbs
  • 0.5 cup Parmesan cheese freshly grated
  • 1 tsp garlic powder
  • 1 tsp dried oregano
Rich Garlic Sauce
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • 0.5 cup chicken broth
  • 0.25 cup white wine dry
  • 1 tbsp fresh parsley chopped

  • 3 Shallow bowls
  • Wire cooling rack

Method
 

  1. Dredge chicken in flour, then egg, then the Parmesan-breadcrumb mixture, pressing firmly to adhere.
  2. Heat oil and butter in a skillet over medium-high. Fry chicken 4-5 minutes per side until golden and cooked through. Set aside on a wire rack.
  3. In the same pan, sauté minced garlic for 1 minute until fragrant.
  4. Deglaze with white wine or broth, scraping up the browned bits. Reduce liquid by half.
  5. Stir in heavy cream and remaining broth. Simmer for 3-5 minutes until thickened.
  6. Whisk in Parmesan cheese and parsley until the sauce is smooth and glossy.
  7. Pour the sauce over the crispy chicken and serve immediately.

Notes

Use a wire rack to keep the chicken from getting soggy while making the sauce.
