Ingredients
  

Gnocchi Base
  • 1 lb potato gnocchi uncooked
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter divided
Vegetables & Sauce
  • 5 oz fresh spinach
  • 3 cloves garlic minced
  • 1 tsp red chili flakes
  • 0.5 lemon juiced
Garnish
  • 0.5 cup feta cheese crumbled
  • 1 pinch black pepper

Equipment

  • Large skillet (non-stick or cast iron)
  • Tongs
  • Chef's knife

Method
 

  1. Heat 1 tbsp olive oil and 1 tbsp butter in a large skillet over medium-high heat.
  2. Add gnocchi to the pan in a single layer. Fry for 3-4 minutes until golden brown on one side.
  3. Flip gnocchi and cook for another 2-3 minutes until crispy. Remove from pan and set aside.
  4. In the same pan, add remaining butter, olive oil, garlic, and chili flakes. Sauté for 30 seconds.
  5. Add spinach and toss until wilted (about 2 minutes).
  6. Return gnocchi to the pan, squeeze lemon juice over top, and toss to combine.
  7. Serve immediately topped with crumbled feta cheese.

Notes

Do not boil the gnocchi before frying! Adding them straight to the pan ensures the best crispy texture.
