Method
- Set up three shallow bowls: one with flour, one with beaten eggs mixed with milk, and one with breadcrumbs combined with parmesan, garlic powder, Italian seasoning, salt, and pepper.
- If using block mozzarella, cut into sticks about 3-4 inches long and 1/2 inch thick. Pat all cheese sticks completely dry with paper towels.
- Coat each mozzarella stick first in flour, then dip in egg mixture, then roll in breadcrumb mixture, pressing to adhere.
- Repeat the egg and breadcrumb coating process for double-breading extra protection.
- Place breaded sticks on parchment-lined baking sheet in single layer. Freeze for at least 2 hours or overnight until completely solid.
- Heat vegetable oil in deep pot to 350-375°F. Fry frozen sticks in small batches for 2-3 minutes until golden brown, turning once.
- Alternative baking method: Preheat oven to 400°F with baking sheet inside. Spray frozen sticks with cooking spray and bake 8-10 minutes, flipping halfway.
- Remove to paper towel-lined plate to drain. Garnish with parsley and parmesan. Serve immediately with warm marinara sauce.
Notes
Freeze breaded sticks up to 3 months. Cook directly from frozen without thawing for best results. Double-breading prevents cheese blowouts. Oil temperature is critical - use a thermometer for perfect results.
