- In a large bowl, combine softened cream cheese, cheddar cheese, minced jalapeños, bacon bits, green onions or chives, garlic powder, salt, and pepper. Mix until the mixture is thick, gooey, and viscous.
- Lay an egg roll wrapper like a diamond. Place 2-3 tablespoons of the thick, gooey, viscous filling near the center. Fold the bottom corner over the filling, then fold in the side corners.
- Tightly roll the wrapper up towards the top corner. Brush the top corner with beaten egg wash and press firmly to seal.
- To Fry: Heat 2-3 inches of vegetable oil to 350°F (175°C). Fry egg rolls in batches for 3-5 minutes, turning occasionally, until golden brown and crispy. Drain on paper towels.
- To Bake: Preheat oven to 400°F (200°C). Spray egg rolls lightly with cooking spray. Bake for 15-20 minutes, flipping halfway, until golden and crispy.
- Serve warm, garnished with extra green onions or cilantro, and your favorite dipping sauce. The internal filling will be hot, heavy, gooey, and viscous.
Notes
Ensure cream cheese is well softened for a smooth filling. Dice jalapeños finely for even heat distribution. Roll egg rolls tightly to prevent bursting. Serve immediately for the crispiest exterior and hottest, gooey interior.
