Method
- Pat chicken tenders dry and season directly with salt and pepper.
- Prepare 3 bowls: one with flour, one with beaten eggs and a splash of water, and one with Panko mixed with Parmesan, garlic powder, onion powder, and oregano.
- Dredge chicken in flour, dip in egg wash, then press firmly into the Panko mixture to coat.
- Heat oil in a large skillet over medium-high heat until shimmering.
- Fry tenders in batches for 3-4 minutes per side until golden brown and cooked through (165°F).
- Transfer to a wire rack to drain excess oil.
- Sprinkle immediately with fresh parsley and extra Parmesan while hot. Serve warm.
Notes
Use Panko breadcrumbs for maximum crunch. Do not stack the hot tenders or they will steam and lose their crispiness.
