- In a bowl, mash the crumbled feta and cream cheese (or ricotta) together until combined but slightly chunky. Season with oregano and black pepper.
- Unroll the phyllo dough and cover immediately with a damp towel to prevent drying.
- Lay one sheet of phyllo flat and brush lightly with olive oil. Place a second sheet on top and brush again.
- Cut the stacked sheet in half widthwise. Place 2 tbsp of filling at the bottom edge of each rectangle.
- Fold the sides over the filling, then roll up tightly like a cigar. Seal the edge with a little oil. Repeat with remaining ingredients.
- In a small bowl, mix the honey and chili flakes. Microwave for 20 seconds to warm up.
- Heat 1/2 inch of oil in a skillet over medium heat. Fry rolls seam-side down for 2-3 minutes per side until golden brown.
- Drain on a wire rack. Serve immediately drizzled with hot honey and topped with sesame seeds and fresh herbs.
Notes
If you prefer baking, brush the rolls generously with butter and bake at 400°F (200°C) for 15-20 minutes until golden.
