Crispy Feta Phyllo Rolls with Hot Honey

Golden, flaky phyllo pastry rolls filled with creamy whipped feta, fried to perfection and drizzled with spicy hot honey and toasted sesame seeds.

Ingredients
  

Cheese Filling
  • 8 oz feta cheese block, crumbled
  • 4 oz cream cheese or ricotta
  • 1 tsp dried oregano
  • 0.5 tsp black pepper cracked
The Wrappers
  • 10-12 sheets phyllo dough thawed
  • 0.5 cup olive oil for brushing and frying
Toppings
  • 0.33 cup honey
  • 1 tsp chili flakes or sliced red chilies
  • 1 tbsp sesame seeds toasted
  • 2 sprigs fresh mint and dill rough chopped

Method
 

  1. In a bowl, mash the crumbled feta and cream cheese (or ricotta) together until combined but slightly chunky. Season with oregano and black pepper.
  2. Unroll the phyllo dough and cover immediately with a damp towel to prevent drying.
  3. Lay one sheet of phyllo flat and brush lightly with olive oil. Place a second sheet on top and brush again.
  4. Cut the stacked sheet in half widthwise. Place 2 tbsp of filling at the bottom edge of each rectangle.
  5. Fold the sides over the filling, then roll up tightly like a cigar. Seal the edge with a little oil. Repeat with remaining ingredients.
  6. In a small bowl, mix the honey and chili flakes. Microwave for 20 seconds to warm up.
  7. Heat 1/2 inch of oil in a skillet over medium heat. Fry rolls seam-side down for 2-3 minutes per side until golden brown.
  8. Drain on a wire rack. Serve immediately drizzled with hot honey and topped with sesame seeds and fresh herbs.

Notes

If you prefer baking, brush the rolls generously with butter and bake at 400°F (200°C) for 15-20 minutes until golden.
