Method
- Heat a small non-stick skillet over medium heat and lightly coat with a dash of olive oil.
- Sprinkle the crumbled feta cheese in a circle around the edge of the pan, leaving the center open.
- Once the cheese begins to melt and bubble slightly, crack the two eggs directly into the center of the pan.
- Sprinkle the eggs and cheese immediately with red pepper flakes and black pepper.
- Fry undisturbed for 3-5 minutes until the cheese forms a deeply golden, crispy skirt and the egg whites are set. The yolk should remain runny.
- Use a thin spatula to carefully remove the eggs from the pan. Garnish with fresh parsley or cilantro and serve immediately.
Notes
For the best melting texture, use block feta in brine rather than pre-crumbled feta. Serve over sourdough toast or avocado.
