Ingredients
  

Pineapple Rings
  • 1 fresh pineapple peeled, cored, sliced
  • 1 cup all-purpose flour
  • 2 eggs beaten
  • 1 cup unsweetened shredded coconut
  • 1 cup Panko breadcrumbs
  • 0.5 cup sugar
  • 1 tsp cinnamon
Dipping Sauce
  • 0.5 cup Greek yogurt or mayo
  • 1 tbsp lime juice
  • 1 tbsp honey
  • 1 tsp sriracha optional

  • Deep skillet or Air Fryer
  • Wire rack
  • 3 Shallow bowls
  • Whisk

Method
 

  1. Slice peeled pineapple into 1/2 inch rings and pat thoroughly dry.
  2. Set up 3 bowls: Flour + Cinnamon in one; Beaten eggs in the second; Coconut + Panko + Sugar in the third.
  3. Dredge each ring in flour, dip in egg, and press firmly into coconut mixture.
  4. Heat oil in a skillet to 350°F (175°C). Fry rings for 2-3 minutes per side until golden.
  5. Drain on a wire rack to maintain crispness.
  6. Whisk sauce ingredients together. Serve rings warm with sauce and fresh mint.

Notes

For a vegan version, use a flax egg or plant-based milk batter instead of eggs, and agave syrup instead of honey.
