Ingredients
  

Crispy Chicken
  • 2 chicken breast cutlets pounded thin
  • 1 cup all-purpose flour
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp paprika
  • 0.5 tsp garlic powder
  • 2 eggs beaten, for dredging
  • vegetable oil for frying
Sandwich Assembly
  • 2 eggs for frying
  • 4 slices cheddar or American cheese
  • 2 sesame seed buns split
  • 2 tbsp butter for toasting and frying eggs

Equipment

  • Large skillet or frying pan
  • Shallow bowls for dredging
  • Wire rack
  • Tongs/Spatula

Method
 

  1. Mix flour, salt, pepper, paprika, and garlic powder in a bowl. Place beaten eggs in another bowl.
  2. Dredge chicken cutlets in flour, then egg, then flour again.
  3. Fry chicken in hot oil (350°F) for 3-4 mins per side until crispy and cooked. Drain on a wire rack.
  4. Immediately place cheese slices on hot chicken to melt.
  5. Toast the buns with butter in a skillet until golden.
  6. Fry the remaining eggs in butter to desired doneness (sunny-side up recommended).
  7. Assemble sandwiches: bun bottom, cheesy chicken, fried egg, bun top.
  8. Serve immediately.

Notes

For a spicy kick, add cayenne pepper to the flour mixture. Ensure chicken is pounded to an even thickness for uniform cooking.
