- Heat a large skillet over medium-high heat and cook ground beef for 6-8 minutes until browned. Drain excess fat.
- Add diced onions to the beef and sauté for 2-3 minutes. Stir in garlic powder, onion powder, salt, pepper, and paprika.
- Remove from heat and mix in ketchup and mustard. Cool for 5 minutes, then fold in both cheeses until combined.
- Place an egg roll wrapper in diamond position. Add 2-3 tablespoons of filling to the center.
- Fold bottom corner over filling, then fold in left and right corners. Roll tightly and seal top corner with beaten egg.
- Repeat with remaining wrappers and filling. Keep covered with damp towel to prevent drying.
- Heat 2-3 inches of oil in deep pot to 350°F. Fry 3-4 egg rolls at a time for 3-4 minutes until golden brown.
- Remove with slotted spoon and drain on paper towels. Serve immediately with dipping sauces.
Notes
For best results, don't overfill the wrappers and ensure oil temperature stays at 350°F. Can be frozen uncooked for up to 3 months. Serve with ketchup, mustard, ranch, or special sauce.
