Crispy Cheeseburger Egg Rolls

Ingredients
  

Filling
  • 1 pound ground beef
  • 1 cup shredded cheddar cheese
  • 0.5 cup shredded mozzarella cheese
  • 0.25 cup diced onions
  • 2 tbsp chopped green onions
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp paprika
  • 2 tbsp ketchup
  • 1 tbsp mustard
Assembly
  • 12-15 egg roll wrappers
  • 1 egg beaten for sealing
  • 3 cups vegetable oil for frying

  • Deep pot or fryer
  • Slotted spoon
  • Paper towels
  • Cooking thermometer

Method
 

  1. Heat a large skillet over medium-high heat and cook ground beef for 6-8 minutes until browned. Drain excess fat.
  2. Add diced onions to the beef and sauté for 2-3 minutes. Stir in garlic powder, onion powder, salt, pepper, and paprika.
  3. Remove from heat and mix in ketchup and mustard. Cool for 5 minutes, then fold in both cheeses until combined.
  4. Place an egg roll wrapper in diamond position. Add 2-3 tablespoons of filling to the center.
  5. Fold bottom corner over filling, then fold in left and right corners. Roll tightly and seal top corner with beaten egg.
  6. Repeat with remaining wrappers and filling. Keep covered with damp towel to prevent drying.
  7. Heat 2-3 inches of oil in deep pot to 350°F. Fry 3-4 egg rolls at a time for 3-4 minutes until golden brown.
  8. Remove with slotted spoon and drain on paper towels. Serve immediately with dipping sauces.

Notes

For best results, don't overfill the wrappers and ensure oil temperature stays at 350°F. Can be frozen uncooked for up to 3 months. Serve with ketchup, mustard, ranch, or special sauce.
