Ingredients
  

Crispy Salmon Bites
  • 1.5 lbs skinless, boneless salmon fillet cut into 1-inch cubes
  • 1 Tbsp olive oil
  • 1 tsp garlic powder
  • 0.5 tsp smoked paprika
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 Tbsp cornstarch
  • 1 Tbsp high-heat cooking oil for searing
Gooey Bang Bang Sauce
  • 0.5 cup mayonnaise
  • 2 Tbsp sweet chili sauce
  • 1-2 Tbsp sriracha adjust to spice level
  • 1 Tbsp fresh lime juice
  • 1-2 Tbsp water or milk to adjust consistency
Garnish
  • 2 Tbsp fresh chives or scallions thinly sliced

  • Large non-stick skillet
  • Mixing bowls

Method
 

  1. Pat salmon cubes dry. Toss with 1 Tbsp olive oil, garlic powder, smoked paprika, black pepper, and salt.
  2. Sprinkle cornstarch over seasoned salmon; toss gently to coat for crispiness.
  3. Whisk mayonnaise, sweet chili sauce, sriracha, and lime juice. Add water/milk until thick, creamy, and gooey/viscous. Set aside.
  4. Heat 1 Tbsp high-heat oil in a skillet over medium-high. Sear salmon for 2-3 minutes per side until golden brown, crispy, and cooked through.
  5. Transfer salmon bites to a serving dish. Drizzle generously with the thick, gooey Bang Bang sauce.
  6. Garnish with sliced chives/scallions. Serve immediately.

Notes

Ensure salmon is very dry before seasoning for maximum crispiness. Adjust sriracha to your preferred spice level. Serve immediately for best texture. Excellent as an appetizer or over rice for a main dish.
