Ingredients
  

Filling
  • 10 oz frozen spinach thawed and squeezed dry
  • 14 oz artichoke hearts canned, drained, chopped
  • 8 oz cream cheese softened
  • 0.5 cup mozzarella cheese shredded
  • 0.25 cup parmesan cheese grated
  • 1 egg large
  • 0.5 cup panko breadcrumbs for binding
  • 2 cloves garlic minced
Coating
  • 1.5 cups panko breadcrumbs
  • 2 tbsp butter melted (optional)
  • 1 egg whisked (for dipping)

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Squeeze all excess moisture from the spinach and dry the artichokes. Chop artichokes finely.
  3. In a bowl, mix spinach, artichokes, cream cheese, mozzarella, parmesan, garlic, spices, one egg, and 1/2 cup panko.
  4. Chill mixture for 20 minutes to make handling easier.
  5. Form mixture into 1-inch balls.
  6. Dip each ball into the whisked egg, then roll in the remaining panko breadcrumbs.
  7. Place on baking sheet and bake for 20 minutes until golden brown.
  8. Serve warm with dipping sauce.

Notes

Serve with warm marinara, ranch, or a spicy aioli. Ensure spinach is very dry to prevent balls from spreading.
