Ingredients
  

Salad Base
  • 4 cups Romaine lettuce chopped
  • 2 cups Napa cabbage shredded
  • 1 cup edamame shelled and cooked
  • 1 cup carrots grated
  • 0.5 cup roasted cashews chopped
  • 0.25 cup fresh cilantro chopped
  • 2 green onions sliced
Crispy Chicken
  • 2 large chicken breasts boneless, skinless
  • 0.5 cup all-purpose flour
  • 2 large eggs beaten
  • 1.5 cups Panko breadcrumbs
  • 1 tsp garlic powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 cup cooking oil for frying
Peanut Dressing
  • 0.33 cup creamy peanut butter
  • 2 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp honey
  • 1 tbsp toasted sesame oil
  • 1 clove garlic minced
  • 1 tsp fresh ginger grated
  • 2-3 tbsp warm water to thin

Method
 

  1. Whisk peanut butter, soy sauce, rice vinegar, honey, sesame oil, garlic, and ginger until smooth. Add warm water to reach desired consistency.
  2. Pound chicken breasts to an even 1/2-inch thickness.
  3. Set up a breading station: flour in one bowl, beaten eggs in the second, and Panko mixed with garlic powder, salt, and pepper in the third.
  4. Coat chicken in flour, dip in eggs, and press firmly into the Panko mixture.
  5. Heat oil in a skillet over medium-high heat. Fry chicken for 4-5 minutes per side until golden and cooked through. Let rest, then slice.
  6. In a large bowl, combine lettuce, cabbage, edamame, carrots, cilantro, and green onions.
  7. Top the salad base with sliced chicken and roasted cashews.
  8. Drizzle generously with peanut dressing and serve immediately.

Notes

Store the dressing separately from the salad greens if meal prepping. Reheat chicken in an air fryer to maintain crispiness.
