Ingredients
  

Whipped Feta Base
  • 8 oz feta cheese block drained and crumbled
  • 4 oz cream cheese or greek yogurt softened
  • 2 tbsp olive oil extra virgin
  • 1 clove garlic minced
  • 0.5 tsp black pepper freshly cracked
Bruschetta Topping
  • 3 large Roma tomatoes seeded and diced
  • 2 tbsp fresh basil chopped
  • 1 tbsp olive oil
  • 1 pinch salt
Garnish
  • 2 tbsp balsamic glaze reduction
  • 1 bag pita chips for serving

Method
 

  1. Place crumbled feta, cream cheese (or yogurt), garlic, and black pepper into a food processor.
  2. Pulse to combine, then run the processor while drizzling in the olive oil until the mixture is smooth and creamy (about 2-3 minutes). Scrape down sides as needed.
  3. In a small bowl, combine diced tomatoes, chopped basil, and 1 tablespoon olive oil. Toss gently.
  4. Spread the whipped feta mixture onto a shallow serving plate or bowl, creating a small well in the center.
  5. Spoon the tomato bruschetta mixture into the center of the cheese.
  6. Drizzle generously with balsamic glaze immediately before serving.
  7. Serve with pita chips or toasted baguette slices.

Notes

Ensure the cream cheese is at room temperature to avoid lumps. If the tomatoes are very juicy, drain them slightly before adding to the dip to prevent watering it down.
