Method
- Remove the side muscle from scallops and pat them very dry with paper towels. Season generously with salt and pepper.
- Heat avocado oil in a large skillet over medium-high heat until smoking. Sear scallops for 2-3 minutes per side until golden brown. Remove from pan and set aside.
- Reduce heat to medium. Add garlic to the skillet and cook for 30 seconds. Deglaze with white wine, scraping up browned bits.
- Add butter, sun-dried tomatoes, and heavy cream. Bring to a simmer.
- Stir in Parmesan cheese until melted and smooth. Stir in half the basil.
- Return scallops to the pan and spoon sauce over them. Warm for 1 minute.
- Garnish with remaining basil and serve immediately.
Notes
It is crucial to use 'dry' scallops (not soaked in water solution) to achieve a proper sear. Do not substitute half-and-half for heavy cream or the sauce may break.
